If you are looking for an elegant, yet simple, dinner, Ham and Swiss Malibu Chicken is it. This dish is fancy enough to serve to guests, but simple enough to serve for a weeknight family dinner. It is so flavorful and delicious. And of course, one of the added bonuses is how easy it is to make.

What Ingredients Do I Need For Ham and Swiss Malibu Chicken?
- Chicken breasts cut in half lengthwise to make 2 thinner cutlets
- Medium eggs
- Italian bread crumbs
- Parmesan cheese grated finely
- Salt
- Pepper
- Sliced ham
- Sliced Swiss cheese
Honey Mustard Sauce:
- Mayonnaise
- Dijon mustard
- Yellow mustard
- Honey
How Do I Make Ham and Swiss Malibu Chicken?
- Preheat the oven to 350 degrees.
- Grease a 9″X13″ baking dish.
- In a medium bowl or pie plate, whisk the eggs.
- In a separate bowl, combine the bread crumbs, Parmesan cheese, salt and pepper.
- Dip each piece of chicken, (6 of them) into the eggs, and then into the bread crumb mixture.
- Place them one at a time into the greased baking dish. (Single layers).
- Bake uncovered for 30 minutes or until the middle of the chicken reaches 160 degrees.
- Remove from the oven and and place 1-2 slices of ham on each piece of chicken.
- Then add a slice of Swiss cheese on top of the ham.
- Return the pan to the oven and cook for an additional 5 minutes.
Honey Mustard Sauce:
- Meanwhile, mix together in a small bowl, mayonnaise, Dijon mustard, yellow mustard, and the honey.
- Spread as much as you like on each piece of Malibu Chicken, or serve in individual small cups and let each person dip their chicken pieces into their own honey mustard sauce.

- Malibu Chicken is a dish made famous by the Sizzler Steak House, and is considered easier to make than Chicken Cordon Bleu.

Tips and Tricks For Ham and Swiss Malibu Chicken:
- Don't use frozen chicken patties. It's so easy to make your own breaded chicken with some breadcrumbs, eggs Parmesan cheese, and seasonings. This chicken is baked, but it still comes out crispy on the outside. It is tender and juicy on the inside.
- The mustard sauce is made with honey, Dijon mustard, yellow mustard, and mayo giving this sauce a unique sweet flavor that tastes so much better than plain mayo-mustard sauce.
- Any kind of ham will work well for this recipe. I like to use deli ham, thinly sliced and purchased from my local meat counter, but Buddig ham will work too.
- Top this chicken dish with a slice of Swiss cheese. It melts slightly over the ham and chicken completing the dish.
- Malibu chicken can be kept in the fridge for leftovers. It tastes really good the next day. You could even add a bun and make it into a sandwich.
